
Halloween is soon to be upon us and I thought to share my super easy yet delicious recipe for Vegetable Beef soup. I’ve been making this soup for years, my family loves it and everywhere I take it- folks want the recipe.

Super easy, filling, healthy and warm- great for whatever your plans are this Halloween!
Ingredients
- I large onion, cubed small
- 4-5 cloves of garlic, smashed and chopped fine
- 1.5 lbs. ground beef
- 1 24 ounce jar ao marinara sauce
- 1 28 ounce can crushed tomatoes
- 1 28 ounce can chopped tomatoes
- I quart vegetable or beef broth
- 1.5 lbs frozen mixed vegetables
(optional- add cooked pasta after soup is finished)

First- sauté the onions. I find that people usually do not cook onions properly. Either they undercook or burn them. Cook the onions in oil- slowly………….This makes the soup taste much better and you never see onions floating around.Picky kids will never know they are there…. After the onions cook add the garlic- stir very quickly on low heat so it doesn’t burn! After the smell brings everyone to the kitchen…add the ground beef and brown.
After the ground beef is brown, add the sauce, both cans of tomatoes and broth. Cook slowly over medium low heat for 45 minutes to an hour- stirring often so it does not burn. At this point add your thawed frozen vegetables and cook for about 30-45 minutes till done. Add salt to taste.
I have added cooked pasta after the soup is cooked or serve it as I have with fresh baked cornbread. Delicious!
